 Ingredients for Chicken Biryani recipe 


   For Marinating the Chicken:

1 kg chicken (bone-in or boneless, cut into medium-sized pieces)

1 cup yogurt (curd)

1 tablespoon ginger-garlic paste

2 green chilies, slit

1 teaspoon turmeric powder

1 tablespoon red chili powder (adjust to taste)

1 tablespoon biryani masala or garam masala powder

1 teaspoon cumin powder

1 teaspoon coriander powder

.Salt to taste

1/4 cup fried onions (store-bought or homemade)

2 tablespoons lemon juice

.A handful of fresh mint leaves, chopped

.A handful of fresh coriander leaves, chopped


 For the Rice:

2 cups long-grain basmati rice

4-5 cups water (for boiling rice)

1 bay leaf

2-3 green cardamom pods

1 black cardamom pod

2-3 cloves

1-inch cinnamon stick

1 teaspoon cumin seeds

.Salt to taste


     For Assembling the Biryani:

2 large onions, thinly sliced and deep-fried (for garnish)

1/2 cup milk

.A few strands of saffron soaked in warm milk

.2 tablespoons ghee (clarified butter) or oil

.Fresh mint and coriander leaves for garnish


Additional Ingredients:

2 tablespoons ghee or oil for frying

1 teaspoon kewra water (optional)

1 teaspoon rose water (optional)



Step 1: Marinate the Chicken


The first and most crucial step in making a delicious chicken biryani is marinating the chicken. The longer you marinate, the more flavorful and tender the chicken will be.


1. In a large bowl, add the chicken pieces and all the ingredients listed under the "For Marinating the Chicken" section. These include yogurt, ginger-garlic paste, green chilies, turmeric powder, red chili powder, cumin powder, coriander powder, garam masala or biryani masala, salt, lemon juice, fried onions, and chopped mint and coriander leaves.

   

2. Mix everything well so that the chicken is evenly coated with the marinade.


3. Cover the bowl with a lid or plastic wrap and refrigerate the marinated chicken for at least 2 hours. For the best results, marinate it overnight.

4. Once the water is boiling, drain the soaked rice and add it to the pot.


5. Cook the rice until it’s 70-80% done. The rice should be firm when bitten, as it will cook further when layered with the chicken.


6. Drain the partially cooked rice and set it aside.


Step 3: Cook the Marinated Chicken


Now that the rice is ready, let’s move on to cooking the marinated chicken.


1. Heat 2 tablespoons of ghee or oil in a heavy-bottomed pan or a large skillet over medium heat.


2. Add the marinated chicken to the pan, along with all the marinade.


3. Cook the chicken on medium-high heat for about 10-15 minutes, stirring occasionally. The chicken should be cooked about 80% through, and the spices should release their flavors.


4. If the gravy seems too thick, you can add a splash of water. However, the consistency should be semi-thick, not too watery.


5. Once the chicken is almost cooked, turn off the heat and set it aside.


Step 4: Layering the Biryani


Layering is a crucial step in making biryani. The rice and chicken are layered in a pot, allowing the flavors to meld together while being cooked on low heat.

Step 5: Dum Cooking (Steaming) the Biryani

1. Cover the pot with a tight-fitting lid. If your lid doesn’t fit snugly, you can seal the edges of the pot with dough or place a heavy object on top of the lid to trap the steam.
2. Cook the biryani on low heat for about 20-25 minutes. This allows the chicken to cook fully, and the rice to absorb all the flavors from the chicken and spices.
3. After 20-25 minutes, turn off the heat and let the biryani rest for 10 minutes before opening the lid.
